The weather lately where I live has been crazy. Where is all the snow? We haven’t had a ground covering snow yet this year. Not cool! On Day 15, it was so nice outside that the kids and I spent all day, up until naptime, playing outside. I do love that I can take them out and run off their energy, but I would like them to use all the snow gear I bought them just once. Before we loaded up in the car to take a walk in town, I ate my peanut butter and banana oatmeal with maple syrup. 1 yellow / 1 purple / 1 teaspoon
The kids love riding in the stroller. According to my fitness app, we walked 2.38 miles. It felt really good to get some fresh air. We even saw a bald eagle while on our walk!
When we got home, I made the kids lunch and I had a snack. Sliced Fuji apples and some natural peanut butter. 1 purple / 1 teaspoon
Mid afternoon I made a plain chocolate Shakeology and ate some mini carrots. 1 red / 1 green
For dinner I tried a new recipe for, Tuscan Style Chicken Soup. Oh my goodness, this was amazing! So flavorful and totally 21 Day Fix friendly. It has beans, chicken, kale, potatoes, and more. This recipe is a keeper for sure! I didn’t count containers at dinner. I ate one and a half bowls of this and was stuffed. I’m sure I didn’t eat all my protein. That’s okay though.
Today was the first day that I wanted to accomplish two workouts. I am happy to say that I got them done! I did Pilates while the kids napped and Total Body Cardio after they went to bed. What an active day. I am down another pound so that was great motivation to keep at it until Day 21!

On day 14, I was supposed to do Yoga, but I didn’t. I gave myself a rest day and promised to do two workouts tomorrow. I realized that I had only one diaper, besides the ones on my kids butts, so we headed out to Target early to do some shopping. I did get the diapers and wipes I needed, but also walked out with a bunch of other goodies. How do you make it out of that place under budget? I need blinders when I go in there or something!
I took my chocolate, banana, and peanut butter Shakeology with me in the car. 1 red / 1 purple / 1 teaspoon
After Target, I was going to go to Wegmans and do my grocery shopping, but I was getting really hungry and didn’t want to eat something I would regret! So we went home and I made a delicious lunch. I had whole wheat crackers, tuna mixed with lemon juice and dill, sliced Granny Smith apples, and avocado. Please excuse how brown that poor thing is. It still tasted good though. 1 yellow / 1 red / 1 purple / 1 blue
The kids woke up early from their nap, and Alex was home from work early, so we decided to go to Wegmans together. Alex wanted Chipotle. He wanted it BAD. How could I say no? I ordered a burrito bowl with brown rice, chicken, cheese, and guacamole. I went over with my yellow and blue containers for the day, but it was so good! 1 yellow / 1 blue / 1 red
Tomorrow starts my attempt at two a days! Wish me luck!

It’s Day 13! I can’t believe I am heading into the final week of this 21 Day Fix. Today was the Dirty 30 workout and I gave it my all. I really want to push myself this last week and ramp up my results. I can’t wait to see how my before and after pictures compare!
Breakfast was…surprise, surprise…oatmeal with bananas and maple syrup. 1 purple / 1 yellow
My mid morning snack was a chocolate and peanut butter Shakeology. 1 red / 1 teaspoon
For lunch, I had the rest of my leftover pork from a couple nights ago. I put it on corn tortillas with cheese, cabbage, and avocado. This is so delicious and feels like a cheat meal! 1 yellow / 1 red / 1 blue / 1/2 green
Dinner was delicious too. I roasted Brussel sprouts in olive oil until golden brown (a little to brown). The butternut squash was leftover from the other night. I sautéed yellow and green squash in a pan with Tuscan olive oil until tender. I also rubbed some chicken breasts in yellow mustard and cooked them in my grill pan. Who knew just putting mustard on chicken could make it taste so yummy? I also made a sauce out of what was left in the bottom of the pan, so it stayed really juicy.
Please continue to root for me as I head into this last week. I am looking to reach my goal of losing 10 pounds total! 3 more pounds to go. Let’s do this!

Day 12 is here and it’s Super Bowl day! I have already told you that I plan on taking a break from my eating plan for the evening, so don’t be surprised when you see pictures of delicious goodies in this post. I knew I would be eating a lot for dinner, so I didn’t want to eat much up until then. For breakfast, I had scrambled eggs with some leftover potatoes from Alex’s dinner the night before. 1 1/2 red / 1 yellow
I did my workout while the kids napped because I knew I wouldn’t feel like doing it later. Cardio is so crazy! That gets your blood pumping! I made a post workout snack of yogurt, berries, bananas, and cinnamon to hold me off until dinner time. 1 red / 1 purple
Now for the fun stuff! I made Pesto Cheese Bombs with a marinara sauce for dipping. These were extremely easy to make and very satisfying. Who doesn’t love melted cheese in the middle of a biscuit?
I also made Loaded Sweet Potato Skins. Another really easy recipe to put together and they were topped with cheddar cheese, bacon, and spring onions.
Of course I had to make a dessert too! I had this No Bake Chocolate Chip Cookie Pie pinned on Pinterest and now was the time. This pie used Chips Ahoy cookies (a classic) and cool whip to create 3 layers of goodness. I had one slice of this and shared it with the kids, so not even a full slice to myself. I was tempted to go back for another slice but I didn’t.
So I have had my cheat day but I am hoping to finish strong! Autumn, the 21 Day Fix trainer, recommends you do 2 a day workouts the last week of the program to help get even greater results. I am really hoping to accomplish this. I would have to do one workout during naptime and one workout after the kids are in bed. Wish me luck!

Before you look at yet another picture of my oatmeal, I just want to say….. I am down another pound! That’s 7 pounds total. I am very excited about that! Today was Pilates Fix and all I can say is feel the burn. Autumn says it’s an active recovery day which works for me. I am still working hard but I don’t have to jump all around out of breath!

Lunch was the leftover Crockpot Pork Carnitas on corn tortillas with cheddar cheese, green and red cabbage, and avocado. 1 yellow / 1 1/2 red / 1 blue / 1/2 green
I will be eating these for lunch until all the pork is gone. So delicious!
For dinner, I made turkey sausage with peppers and onions. I roasted some butternut squash in Tuscan herb olive oil and served that alongside. I had these Italian turkey sausages in the freezer from when they were on sale at Wegmans. I always buy meat when they mark it down on manager’s special and put it in my freezer for later. It always makes me feel like I am getting a deal. I think these sausage were $3 less than regular price. 1 red / 1/2 green
After our late night workout, I got really hungry. I realized I still had a red container and a purple container leftover, so I made myself a little snack. Yogurt with berries, honey, and cinnamon.
Tomorrow night is the Super Bowl and I can’t wait to take a break from my eating plan and enjoy what everyone has made. I hope I can get back on track afterwards and finish this program strong!
