Some how, some way, I missed posting about a day. I don’t know where the day went but I am one day behind. Technically, today is day 18 from when I started the 21 Day Fix but I am only on Day 17 posting on the blog. Hmmm….very strange. Maybe it’s the lack of ice cream in my diet? I’m not thinking clearly? Oh well. I am going to roll with it.
I actually had something other than oatmeal for breakfast! I sautéed some leftover potatoes in a pan with a little bit of olive oil. I added in spinach and let it wilt down. I poured over 3 eggs I had scrambled in a bowl, and stirred while they cooked. I topped the whole thing with cheddar cheese. 1 1/2 red / 1/4 green / 1 yellow / 1/2 blue
On Facebook, I saw that a local small business was featuring a produce bundle for sale and I thought it was the perfect opportunity to go check it out. I grabbed a snack for on the go and loaded the kids up in the car. Yogurt with cinnamon, honey, and berries. 1 red / 1 purple
Local Homestead Products LLC was featuring this produce bundle and I think it is such a great idea! You get to try a variety of different items and the bundles are always changing. They even have a bundle loyalty card where if you buy 10 your 11th bundle is free. This bundle was $25 which is a great price. I am glad I went to pick it up. I also picked up a couple treats for Alex and I for Valentines Day! Yes, there is ice cream involved. 🙂
Since I didn’t have oatmeal for breakfast, and it was freezing cold outside, I thought it was a good idea to have it for lunch. You didn’t think I was just not going to eat my oatmeal did you? Peanut butter oatmeal with strawberries and maple syrup. 1 1/2 yellow / 1 purple
Time for dinner! I blanched the green beans I got in the produce bundle and then sautéed them in olive oil, with red onions and garlic. As for the squash, I tossed it in a little bit of Tuscan Herb olive oil and roasted it at 400 degrees until tender. The pork tenderloin was something I found on sale at Wegmans. I’m not sure it was totally 21 Day Fix approved but it tasted amazing! It was already marinated with bourbon and ready to bake. 2 green / 1 1/2 red
Tonight was Lower Fix and 10 Minute Abs. I’m not sure why, but these past couple nights, I have been having a hard time getting motivated to workout. I posted on my accountability group that I was thinking of skipping my workout and a girl quickly commented back telling me to get on it! That was awesome! Just what I needed to get my act together and complete both workouts! A big thanks to my accountability group for being so awesome!
